The wild salmon in this chowder was sustainably caught in the ice cold waters off the coast of Southeastern Alaska. We source it from our partner Oregon Lox which cold smokes it in their facility in Eugene, OR.
Each salmon they catch is carefully inspected for appearance and firmness, then hand filleted and closely trimmed to remove pin bones, bruises, and excess fat.
