Sweet and Sour Glaze


  • 2 thawed Wild Albacore Tuna fillets
  • 1/8 cup sesame oil
  • 1/8 cup of water
  • 1 tsp fish sauce
  • 3 tsp  lime juice
  • 4 tbsp brown sugar
  • 1 tsp grated ginger
  • 1/2 tsp ground garlic
  • 1 tsp finely diced red peppers
  • 1 tsp of finely diced green onions
  • 1 pinch of red pepper flakes or cayenne powder


  1. Combine ingredients in a bowl.
  2. Thaw medallions and pour marinade over them in a shallow pan. Marinate for two hours, flipping after one hour.
  3. To cook, grill for two minutes on each side basting with glaze, bake at 325 degrees for 10 minutes or pan sear for three minutes on each side.
