2 thawed Wild Albacore Tuna fillets
1/8 cup sesame oil
1/8 cup of water
1 tsp fish sauce
3 tsp lime juice
4 tbsp brown sugar
1 tsp grated ginger
1/2 tsp ground garlic
1 tsp finely diced red peppers
1 tsp of finely diced green onions
1 pinch of red pepper flakes or cayenne powder
Combine ingredients in a bowl.
- Thaw medallions and pour marinade over them in a shallow pan. Marinate for two hours, flipping after one hour.
- To cook, grill for two minutes on each side basting with glaze, bake at 325 degrees for 10 minutes or pan sear for three minutes on each side.
