Pineapple Salsa for Fish Tacos


1 cup chopped pineapple

2 tbsp finely chopped red onion

2 tbsp finely chopped green onion

1 tbsp  finely chopped red pepper

1 tbsp chopped cilantro

1 tsp honey

dash of cayenne

2 tsp finely minced jalapeno

juice of 1 lime


  1. Combine all ingredients, cover to marinate at least 1 hour. For fish tacos: pan-fry rock fish fillet and combine salsa, slaw and crema in a tortilla to serve.
